My favorite desert is a coconut cake with lemon filling between the layers (the filling was homemade of course). With seven minute frosting that resembled a light marshmallow frosting. My Grandmother Holland made the best. She only used Swans Down Cake Flour, a fresh grated coconut, including the coconut milk and room temperature eggs, beating them in one at a time. It was a four layer cake with a smooth, velvet texture!
