Gluten-free Coconut Granola Bars

GLUTEN-FREE COCONUT GRANOLA BARS
PREP TIME: 15 MINUTES, PLUS 1 HOUR COOLING
COOK TIME: 30 MINUTES
MAKES: 12 BARS

1 1/3 cups oats
1/3    cup coconut flour
3       T ground flax seed
1/2    cup dark brown sugar
1/4    cup shredded coconut
1/4    cup almonds, chopped
1/2    cup honey
1/2    cup butter, melted
1       egg

1. Preheat oven to 325°F. Lightly butter an 8”x8” baking dish.
2. In a medium bowl, combine oats, coconut flour, flax seed, dark brown sugar, coconut, and almonds.
3. In a small bowl, whisk honey, butter, and egg together. Stir into the dry mixture.
4. Spoon mixture into prepared baking dish, and level with a spoon.
5. Bake for 30 minutes, and cool for 1 hour before serving. If desired, spread a thin layer of chocolate over the top before cutting.

Gather ingredients. Preheat oven to 325°F.

Add 1/2 cup of honey to a small bowl.


Add 1/2 cup of melted butter.


Add 1 egg.


Whisk honey, butter, and egg together.


Stir into the dry mixture.

Spoon the mixture into the prepared baking dish, and level with a spoon.
