GLUTEN-FREE COCONUT GRANOLA BARS
PREP TIME: 15 MINUTES, PLUS 1 HOUR COOLING
COOK TIME: 30 MINUTES
MAKES: 12 BARS
1 1/3 cups oats
1/3 cup coconut flour
3 T ground flax seed
1/2 cup dark brown sugar
1/4 cup shredded coconut
1/4 cup almonds, chopped
1/2 cup honey
1/2 cup butter, melted
1 egg
1. Preheat oven to 325°F. Lightly butter an 8”x8” baking dish.
2. In a medium bowl, combine oats, coconut flour, flax seed, dark brown sugar, coconut, and almonds.
3. In a small bowl, whisk honey, butter, and egg together. Stir into the dry mixture.
4. Spoon mixture into prepared baking dish, and level with a spoon.
5. Bake for 30 minutes, and cool for 1 hour before serving. If desired, spread a thin layer of chocolate over the top before cutting.

My daughter is trying a gluten free diet and these bars look delicious. I am going to try making them for her as they would be a great breakfast to grab on her way out the door . Thanks for sharing!
They are a moist bar and not dry like the bars in stores. I absolutely love them. What until you see next week’s gluten-free recipe:)
It would be nice to find gluten free and sugar free too. Those are hard to find.
It would be easy enough to add more honey or stevia or coconut sugar to replace the brown sugar.
