COCONUT-GRAPEFRUIT VINAIGRETTE
PREP TIME: 5 MINUTES
MAKES: ABOUT 1/2 CUP
1/4 cup fresh grapefruit juice
1 t white wine vinegar
1 t coconut sugar
1/2 t salt
1 T safflower oil
1 t coconut oil, melted
1. In a small bowl, combine grapefruit juice, white wine vinegar, coconut sugar, and salt. Mix well.
2. In another small bowl, combine safflower oil and coconut oil. Mix well.
3. Pour oil mixture into grapefruit juice mixture and mix well. Serve immediately (if refrigerated, the coconut oil will solidify. To make and refrigerate, replace coconut oil with 1 t safflower oil).

Yummm, this sounds light and fresh with the citrus base. I bet it is quite delicious on salads.

I know this probably sounds very silly, but here goes. What type of salad would this be good on? It sounds amazing, just can’t wrap my mind around the ingredients of the salad. Any suggestions would be greatly appreciated.
