CHICKEN & BROCCOLI STIR FRY
PREP TIME: 45 MINUTES
COOK TIME: 25 MINUTES
MAKES: 4 SERVINGS
3 T peanut oil
5 garlic cloves, peeled and minced
2 T galangal (Thai ginger), peeled and minced
¼ t salt
3 carrots, sliced
4 cups broccoli florets
2 boneless, skinless chicken breasts, grilled and sliced
2 T red chili paste
4 green onions, sliced
¼ cup Thai basil, thinly sliced
¼ cup cilantro, minced
¾ cup dry roasted peanuts
2 limes, cut into wedges
1. In a large skillet or wok, combine peanut oil, garlic, galangal, and salt. Cook over medium heat until fragrant. Add carrots and broccoli; cook until tender-crisp.
2. Add chicken breast and chili paste; cook until heated through and remove from heat.
3. Stir in green onions, basil, cilantro, and peanuts. Serve with lime wedges and long-grain brown rice.

Cook until tender-crisp. Then add 2 grilled and sliced boneless, skinless chicken breasts.
Add 2 T red chili paste.
Cook until heated through and remove from heat.
Add 4 sliced green onions.
Add ¼ cup Thai basil, thinly sliced.
Add ¼ cup cilantro, minced.
Add ¾ cup dry roasted peanuts.
Stir to combine and serve with lime wedges and long-grain brown rice.
Hmmmm, this might be the perfect idea for that left over baked chicken in the fridge. Healthy, quick, and I have everything I need!
