Chocolate brownies with walnuts
Apple bars, from an Amish cookbook. I can use either a 9×13 pan or I have also used my cast iron frying pan. The bars come out more like brownies, but it is not a sweet bar with apples and walnuts. They freeze well, and I just pop one in the microwave and with a cup of tea, perfect to sit and watch the birds.

Oh, for me it has to be Strawberry Trifle! And every once in a while, I’ll add banana slices and crushed vanilla wafers to the mix – Mmmmm- M! Heaven in a bowl! 🙂
My great Aunt Edna cooked a apple stack cake from scratch. She picked apples fro.m a tree in her yard. Sliced and dried them on screens in the yard. She cooked apple sauce. Made at least 10-12 layers of made from scatch cake (1 measurement was a teacup of flour), She would bring it to all the family gatherings shecame to. It was sublime.

Pumpkin pie.
My favorite dessert is Pineapple Upsidedown Cake. My mom always made pineapple upside down cake in a cast iron skillet. She would melt the butter in the skillet and add brown sugar. Then she would place pineapple circles from the can on top of the dissolved brown sugar. Then she would put a maraschino cherry in the middle of each pineapple circle. She mixed the batter and poured it over the pineapples and baked in the oven. When it was done she would invert the pan onto a plate and out would come the most delicious masterpiece. Since my mom passed away from ovarian cancer when she was only 58, every time I make this cake fond memories of her return and my heart is filled with joy. Thank you for giving me the opportunity to share.
